When David MacCarfrae, the internationally acclaimed cake-decorating artist, was 16, he enrolled on his first free-hand cake decorating college course. 35 years later, after a glittering career, David is teaching students and professionals across the world and is a global celebrity.

It should come as no surprise that David started out on his creative and entrepreneurial journey early in life. Born in 1964, to Hilda and Roy in Liverpool, one of his first Christmas presents was a musical keyboard and cash register, and this marked the start of a wonderful and inspiring artistic story.
Whilst David’s father took his brother off to football matches, David stayed with Mum on a Saturday while she baked for the week ahead – helping and watching intently as she created a delicious assortment of chocolate cakes, Swiss rolls, apple pies, Eccles cakes and his favourite – lemon meringue pie.
A place at Colquitt Technical and Nautical College in Liverpool marked the start of a dream education where David could combine his love for art, cooking and baking while learning the art of free hand cake decorating. After being named student of the year, a proud David was awarded the prestigious Renshaw Challenge Cup along with a scholarship, which included an all-expenses-paid trip to study with Master Confectioners at the highly respected Richemont School of Bakery and Confectionery in Lucerne, Switzerland.
Before long, David started an apprenticeship at Waterfields Bakery in Leigh followed by a cake decorating position at Simmons Bakery in Hatfield near London. However, a strong entrepreneurial itch persisted and soon, with help from the Government sponsored ‘Enterprise allowance scheme’ and a £2000 bank loan, David Cakes was launched in 1983, initially from a converted lounge in the family home and then as a prime retail shop in Crosby, Liverpool, Merseyside UK.
Inspired by his love for the Dynasty TV series with a permanent showcase of 40 wedding cakes, it was not long before a 3D life size cake of ‘Alexis Carrington Colby Dexter’ captured the attention of the national press and the backing of Dame Joan Collins herself.
A number of high profile business awards followed and creating BIG wedding cakes became a signature trademark.
In 1986, David had the honour of creating a Royal Engagement Cake and a Royal Wedding Cake for the marriage of HRH Prince Andrew to Miss Sarah Ferguson and in 1999, he created a Royal Wedding cake for the marriage of HRH Prince Edward to Miss Sophie Reece-Jones.
Since then, numerous celebrities, including Steven Gerrard, Jamie Carragher, Michael Owen, John Parrot and many other sports and TV soap stars have called on David to create a unique bespoke free hand decorated cake graced with royal elegance and grandeur.
With a booming business and countless appearances in worldwide trade press and magazine, one unexpected phone call one Sunday night lit a rocket under his TV career when a casting agency in New York invited him to be a judge on Cake Walk – an International cake decorating reality TV Series. The series premiered on major Canadian television network ‘Slice’ and became a huge success, broadcast on many major TV networks around the world – from USA to Hong Kong and Brazil to New Zealand.
Following this, David has appeared as guest of honour, judge and contributor at numerous international shows across the world.
Since 2014, David has also travelled the world showcasing Kelmy international bakery and cake decorating products exclusively. A full range is now available here in the UK.
Added to the list of achievements was an engagement at the end of 2015, when David was requested by Hong Kong International Bakery Expo (HKIBE) Chief Executives to talk to an invited VIP audience about the history of Royal Icing during the 175th year of Royal Icing celebrations (1840-2015).
Showcasing his on-going journey through social media has always been a pastime and many of David’s You Tube videos reveal his profound love for making music and contain his own original music compositions.
After 35 years, David is now a celebrated international teacher and has stepped away from the retail side of the business in order to concentrate solely on his passion – delighted that he has the chance to continue doing what he loves. His energy, down to earth patter, boundless creativity, style and warm personality continues to attract interest and fans from across the world.
