When David MacCarfrae, the internationally acclaimed cake-decorating artist, was 16, he enrolled on his first free-hand cake decorating college course.
38 years later, after a glittering career, David is teaching students and professionals from across the world and is a global cake decorating celebrity.

It should come as no surprise that David started out on his creative and entrepreneurial journey early in life. Born in 1964, to Hilda and Roy in Liverpool England, one of his first Christmas presents was a musical keyboard and cash register, and this marked the start of a wonderful and inspiring artistic story.
Whilst David’s father took his brother off to football matches, David stayed with Mum on a Saturday while she baked for the week ahead – helping and watching intently as she created a delicious assortment of chocolate cakes, Swiss rolls, apple pies, Eccles cakes and his favourite – lemon meringue pie.
A place at Colquitt Technical and Nautical College in Liverpool marked the start of a dream education where David could combine his love for art, cooking and baking while learning the art of free hand cake decorating specialising in Royal Icing.
After completing his college studies, receiving City and Guild ‘Distinctions’ as well as being named student of the year, a proud David was awarded the prestigious Renshaw Challenge Cup along with a scholarship, which included an all-expenses-paid trip to study with Master Confectioners at the internationally renowned and highly respected Richemont School of Bakery and Confectionery in Lucerne, Switzerland.
Upon his return, David started a short apprenticeship at Waterfields Bakery in Leigh Lancashire followed by a 2 year cake decorating position in Hertfordshire at Simmons Bakery in Hatfield near London.
However, a strong entrepreneurial itch persisted and in 1981 David returned home to pursue his dream and make it a reality.
With help from the Government sponsored ‘Enterprise allowance scheme’ and a £2000 bank loan, David Cakes was launched in the autumn of 1983, initially from a converted lounge in the family home and then in the summer of 1984 as a prime retail shop in Crosby, Liverpool, Merseyside, England.
David’s cake store opened inspired by his love for the Dynasty TV series. With blue satin wallpaper and chandeliers David Cakes of Distinction boasted a permanent display over over 100 wedding and celebration cakes.
David paid tribute to his inspiration and it was not long before a 3D life size cake of ‘Alexis Carrington Colby Dexter’ captured the attention of the national press and the backing of Dame Joan Collins herself.
A number of high profile Granada Television business awards and a National Training Award from Baroness Margaret Thatcher followed and very soon creating BIG wedding cakes became David Cakes signature trademark.
In 1986, David had the honour of creating a Royal Engagement Cake and a Royal Wedding Cake for the marriage of HRH Prince Andrew to Miss Sarah Ferguson (soon to become The Duchess of York) and in 1999, he created a Royal Wedding cake for the marriage of HRH Prince Edward to Miss Sophie Reece-Jones (soon to become The Countess of Wessex).
Since then, numerous celebrities, including Steven Gerrard, Jamie Carragher, Michael Owen, John Parrot and many other sports and TV soap stars have called on David to create a unique bespoke free hand decorated cake graced with royal elegance and grandeur.
With a booming business and countless appearances in worldwide trade press and magazines, one unexpected phone call one Sunday night in 2010 lit a rocket under his TV career when a casting agency in New York invited him to be a judge on CAKE WALK – a 13 part International cake decorating reality TV series offering him a 3 year contract after watching his YouTube videos.
After 3 months filming in Toronto Canada, the series premiered 2011 on major Canadian television network ‘Slice’ and became a huge success, broadcast on many major TV networks around the world – from USA to Hong Kong and Brazil to New Zealand.
CAKE WALK has now been acquired by Amazon UK and Amazon USA available to watch on Amazon video streaming.
In 2011 David was also invited to create a giant 8 tiered Royal Style wedding cake on TV documentary ‘William and Kate: Inside The Royal Wedding’ produced by ‘Simply Media’ which was broadcast worldwide. During the documentary David was interviewed about his personal experiences with regards to creating Royal Wedding Cakes for The British Royal Family along with the history and evolution of Royal Wedding Cakes from the past to the present day.
In 2012 David started to ease off from the retail side of his business to focus on his love to share his art, initially offering cake decorating classes of an evening in his cake store showroom and then teaching weekend events which attracted an international student audience.
This was the start of a journey that would soon take David on a cake decorating tour around the world as international academies invited David to be their guest of honour at cake decorating seminars and conferences.
During 2014, while teaching in Spain, David was invited by Spanish corporation Kelmy to assist with the development of Kelmy Royal Icing Mix. Kelmy also invited David and along with his assistant Edward to join them as they travelled the world showcasing Kelmy bakery and cake decorating products.
In 2016 David’s Cake Craft became the exclusive UK importer and distributor of Kelmy products, now available to purchase at David’s Cake Craft online store.
Added to the list of achievements was an engagement at the end of 2015, when David was requested by Hong Kong International Bakery Expo (HKIBE) Chief Executives to talk to an invited VIP audience about the history of Royal Icing during the 175th year of Royal Icing celebrations (1840-2015).
David has been invited as international guest of honour, judge and contributor at numerous cake shows across the world.
In 2018 he was invited by German Chief Executives at CAKE DREAMS in association with CREATIVA and Kelmy to participate in a live creative challenge – to decorate a giant 9 tier, 11ft tall ‘Royal’ style wedding cake in just 3 days! During the event David was invited to join CREATIVA show presenters Britta and Martin for a lighthearted fun interview at ‘blabla cafe’ live streaming internet station.
In 2018 David was invited to be featured on TV documentary ‘Harry and Megan – Royal Rebels’ commissioned by Lifetime USA produced by ‘Emporium Productions’ which was broadcast worldwide. David was interviewed about his personal experiences with regards to creating Royal Wedding Cakes for The British Royal Family along with the history and evolution of Royal Wedding Cakes from the past to the present day. David was also featured in HELLO! Magazine Canada – Royal Wedding Cakes Special Feature.
Showcasing his on-going journey through social media has always been a pastime and David’s You Tube Channel reveals his profound love for making videos and also for composing music which is showcased on many of his cake decorating and lifestyle videos.
After 38 years, David is now a celebrated international teacher and has stepped away from the retail side of the business in order to concentrate solely on his passion – delighted that he has the chance to continue doing what he loves.
His energy, down to earth patter, boundless creativity, style and warm personality continues to attract interest and fans from across the world.
