David will show you how he makes Royal Icing embracing egg whites, meringue powder and instant mix as he teaches you to understand the different consistencies required for each Royal icing cake decorating technique used during the creation of masterclass design projects.
During the 7 day masterclass course David will teach over 50 free-hand / freestyle cake decorating techniques as he invites students to each create all of the following:
Project 1: Luxurious 5 tier Wedding Cake
Create a luxurious 5 tiered Old English Royal Icing over-piped wedding cake design measuring 2.5ft high X 1.5ft wide The design project will include an exciting selection of lavish piping patterns, complex trellis work, brush embroidery and intricate fine piping detail combined with suspended over piped borders. David will also be showing you and inviting you to coat your cake design with Royal Icing using centuries old techniques.
Project 2: Revolving Carousel Cake
Create a spectacular revolving carousel cake design that is suitable for any celebration. Measuring 2ft high X 1.5ft wide. this design project will include an exciting selection of ornate piping patterns, fine art hand painting, flood work, run-out horses, ornate letter piping, flower and teddy bear model making.
Project 3: Palette Knife Cake Painting
Discover the joy, freedom and sheer exhilaration of palette knife painting with Royal Icing as David encourages you to release your inner artist through expression and colour, as you decorate a 8” deep X 6” wide design, with no boundaries or restrictions during this very creative Royal Icing adventure.
Project 4: The Grand Royal Crown
Inspired by Royal pageantry with all the pomp and circumstance, create a magnificent crown. Embrace the technical and scientific understanding of structural engineering as you pipe the entire Royal Icing design directly and spontaneously onto the cake surface.
Project 5: Complex Geometric Royal Icing String Work
Inspired by patterns consisting of lines, curves and points, create a stunning 6” top tier wedding cake design decorated with ornate Royal icing borders, embellished with complex geometric string work patterns.
Project 6: Multi-dimensional Royal Icing Lace
Create a beautiful 6″ top tier wedding cake decorated with a selection of delicate suspended Royal Icing lace patterns. Design and create your very own unique patterns using only free-hand / free-style piping techniques.
56 hour Intensive Training Programme
The 7 day masterclass course taking place at The Park Hotel in Liverpool, will give students the opportunity to receive 56 hours of intensive training as David teaches you world class cake decorating industry secrets.
This event is only open to a maximum of 6 students which means David can give personalised one to one attention to each student attending, to guide and support whenever help is needed, to ensure you will receive maximum training.
All equipment and materials are supplied along with complimentary light beverages and snacks served each day during the masterclass course event.
With over 35 years of experience running his retail cake store, David’s teaches techniques that are designed to assist in saving production time to help make cake decorating profitable, so should you have your own business or are planning to open your own business, he will embrace this within the training programme offering suggestions and advice based on his own business experiences.
David reassures his students that he speaks slowly during the course, also as what he does is very visual, it is easy to learn his technique through watching his demonstrations.
This 7 day course is designed for everyone to enjoy, designed for students who wish to evolve in their cake decorating using free hand / free style decorating techniques with no restrictions No moulds, no stencils, or templates are required as every detail is hand piped directly free-hand / free style onto the cake surface enabling you to create a unique cake design every time.

Many international students who attend David’s Cake Craft masterclasses travel to Liverpool from very long distances. After a few days of being absorbed in such intensive training combined with jet lag, it is natural that you may start feeling a little tired. So, we so we have a rest day scheduled on the 4th day of the course which gives everyone a day, wide open to enjoy at your leisure.
You may wish to simply relax and replenish for the creative days ahead or have a party and discover Liverpool with fellow students, taking a magical mystery tour and explore our wonderful city!
Whether it is shopping or taking a scenic tour of the city centre with a travel guide (that we can arrange for you), it’s always great to discover the cultural, sights and sounds of Liverpool old and new!
During your stay in Liverpool, you will also be invited to attend a meal at a traditional English Country Pub with David, assistant Edward, along with all the other students attending, so you will all be able to enjoy traditional English food and celebrate a beautiful together! This dining out evening will be presented with compliments of David’s Cake Craft.
