Coating Royal Icing using Centuries Old Techniques

David will show you how he makes Royal Icing using egg whites, meringue powder and instant mixes while addressing all the technical aspects and scientific understanding of this centuries old bakery product.

David will show you how to prepare and coat a cake with Royal Icing using the traditional icing ruler and side scraping method while addressing the number of coats required for different sized tiers when creating large stacked or separated wedding cake structures.

 

Project 2

Luxurious 5 tier Royal Icing Wedding Cake

Design and decorate your very own luxurious 5 tiered Royal Icing wedding cake design measuring 2.5ft high X 1.5ft wide ornately piped with traditional English free-hand piping techniques.

Master your free-hand piping skills as you learn how to decorate the entire design start to finish directly and spontaneously onto the cake surface embracing multi-layered over-piping, suspended piping, suspended trellis work and fine detailing.

Create a spectacular revolving carousel cake design measuring 2ft high X 1.5ft wide.

Discover how to combine many different cake decorating techniques together, applied directly and spontaneously onto the cake surface, resulting in a stunning cake design, full of excitement and creative expression.

 

Project 4

Palette Knife Cake Painting Designs with Royal Icing 

Discover the joy, freedom and sheer exhilaration of palette knife painting as you release your inner artist through expression and colour!

Learn how to create a beautiful designs and patterns, personalised with your own signature style as you enjoy creating your very own 8″ deep personalised palette knife painted cake design with flowers or landscapes, abstract art or a combination, it’s up to you !

With focus on mixing colour and adjusting painting consistencies, enjoy learning how to apply the technique using both Royal Icing or buttercream, embellished with fine piping detail.

David will also address how the preparation of a cake to be palette knife painted will vary if using Royal Icing or Buttercream to apply the technique.

Inspired by Royal pageantry with all the pomp and circumstance, learn how to create a magnificent life-size medieval style English Royal Crown.

This is an ideal design for the top tier of a wedding cake and the design concept can be adapted to create a design to celebrate the crowning of a Prom Queen or the winner of a beauty pageant.

Embrace the technical and scientific understanding of structural engineering as you learn how to decorate the entire gravity defying Royal Icing design directly and spontaneously onto the cake surface.

 

Project 6

Ornate Royal Icing Run-out Collars

Design and create your very own unique luxurious Royal Icing run-out collar single tier wedding cake design.

Learn how to create a completed Royal Icing collar very quickly by combining together many different creative free-hand techniques.

Creating and decorating chocolate run out collars will also be addressed within this training module.

 

Project 7
3D Letter Piping with Royal Icing

Take piping a greeting on your cakes to a new exciting level as you learn how to design and decorate vertical 3D letters, names, greetings and assorted decorations.

 Using free-hand Royal icing piping techniques without requiring any moulds, stencils, templates or cutters, simply let your creative imagination take control as David encourages you to experiment creating elegant and modern pop art designs – it’s up to you !
Project 8
Intricate Piping Patterns / Embroidery / Cross Stitch Effects with Royal Icing 

Using fine piping tips, learn how to design and decorate an exciting selection of intricate free-hand piping patterns with Royal Icing.

David will be teaching how to create a selection of designs – including fine floral embroidery patterns, stitching and cross stitch embroidery effects – without requiring stencils, addressing flat and vertical piping, allowing you to apply the technique directly on top and on the sides of wedding and celebration cakes.

You will also have the opportunity to apply these techniques to your 5 tier wedding cake design project.

 

Project 9

Embossed Royal Icing Flood-in Techniques

Embrace multi-cultural art and design as you learn how to create exciting embossed names, greetings and ornate patterns using flood-in piping techniques.

Techniques can be applied to wedding and celebration cake designs whether covered in fondant, Royal Icing or buttercream.

The consistency of the creative medium used during the application will be addressed and you will also have the opportunity to apply the techniques to your revolving carousel cake design project.

Complex Geometric Multi-dimensional Royal Icing Piped Cake Decorations

Learn how to create a beautiful selection of delicate multi-dimensional Royal Icing lace decorations that will add drama, spectacle and high value to a bespoke wedding or celebration cake design.

Inspired by patterns consisting of lines, curves and points, learn how to design and decorate complex geometric free-hand piped cake decorations without requiring any stencils, templates, dome shaped moulds or flat piping on wax paper.

 

Project 11

Hand Painting with Food Colour

Relax and enjoy another creative hand painting experience as David invites you to embrace fine art in edible colour.

Using super fine paintbrushes, learn how to combine watercolour application techniques with finely piped Royal Icing detailing to create a beautiful personalised celebration cake fondant plaque topper – finished with your own signature style.

With David’s support and guidance he will demonstrate how we can visualise from our thoughts and memories in order to maximise our creativity, allowing the designing process to be most pleasurable, resulting in a finished hand painting that is unique every time.

Using a selection of plain piping tips, David will show you an exciting selection of script letter piping techniques as you learn how to pipe multi-dimensional names and greetings embellished with beautiful fine piped detailing.

Embrace multi-cultural art and design patterns without requiring stencils while addressing flat and vertical piping, allowing you to apply the techniques directly on top and on the sides of wedding and celebration cakes.

During this training module David will embrace how to apply the techniques for both Royal Icing and also Buttercream while addressing different consistencies required to create the embossed piping effects.

Learn how to personalise your wedding cakes with an exciting array of Royal Icing piped plaques.
Then adapt the techniques and have fun creating a selection of personalised Royal Icing place settings – an ideal edible gift to present at a wedding celebration or intimate dinner party.

Learn how to secure plaques onto the side of a cake and enjoy embellishing your creations with luxurious Royal icing piping using free-hand techniques, without requiring the use of any stencil or template guides.

The creative free-hand piping techniques used can also be applied to decorate cookies, which David will demonstrate during this training module.

Suspended Royal Icing String Work Cascade for Wedding Cake Decoration

Join David, Edward and fellow students as they take on a fun, but most educational challenge with endless creative possibilities – to create a spectacular suspended 2ft cascade of Royal Icing string work, complete with dainty over-piped flowers.

As this type of structure may need finishing off at a wedding venue, possibly in front of venue staff and wedding guests, this piping project will give us confidence and an understanding of the structural engineering of the creative art piece, along with having to deal with those intense creative emotions of jeopardy while performing this piping technique in a public place.

Rest Day

Many international students who attend David’s Cake Craft masterclasses travel to Liverpool from very long distances. After a few days of being absorbed in such intensive training combined with jet lag,  it is natural that you may start feeling a little tired. So, we have a rest day scheduled on the 4th day, taking a break from the 7 day training programme, which gives everyone a free day, wide open to enjoy at their leisure. You may wish to simply relax and replenish for the creative days ahead or discover Liverpool taking a magical mystery tour and explore our wonderful city!

Whether it is shopping or taking a scenic tour of the city centre with a travel guide ( that we can arrange for you) , it’s always great to discover the cultural, sights and sounds of Liverpool old and new!
