This intensive 7 day advanced masterclass training programme is designed to help you take your cake store designer service to new level of creative excellence, as you embrace centuries old creative free hand cake decorating techniques – piping all your design patterns spontaneously onto the cake surface without having to use any templates, stencils, cutters, modelling tools or moulds, so making your cake decorating quicker, easier and more profitable.

Designing Our Client’s Dream Wedding Cake
In his 30 years of retail cake store experience, David has had many clients requesting him to create a giant multi-tiered wedding cake of a high value and they have always wanted a cake design that no other client has ever had. So by offering a bespoke designer service within our business means a client can have a unique wedding cake every time.
In this training module David will demonstrate how a high value unique design commission can be achieved through communication and visualisation techniques while embracing our client’s own wedding cake design ideas.
Preparation of Giant Wedding Cake Tiers
David will show you how to prepare giant cake tiers for stacking / separating – to reach great heights.
From addressing the structural engineering of each wedding cake tier – to supporting the entire design structure and how to avoid any internal or external failure / collapse of the wedding cake infrastructure.
From the application of marzipan with the option and understanding of how to cover with fondant, David will address what covering medium is most suitable to use when creating giant multi-tiered cakes with a different cake filling in each tier.
David will also show you how he makes Royal Icing using egg whites, meringue powder and instant mixes while addressing all the technical aspects and scientific understanding of this centuries old bakery product.
Coating Giant Wedding Cake Tiers with Royal Icing using Centuries Old Techniques
Embracing centuries old cake decorating techniques, David will demonstrate and encourage you to take part in coating cakes from 4″ deep giant wedding tiers to the challenge of coating 10″ deep giant wedding cake tiers with Royal Icing using the traditional icing ruler and side scraping method.
David will also be addressing the number of coats required for different sized tiers and how to ensure that the Royal Icing can be cut and eaten with pleasure.
Piping Advanced Design Framework Sections with Royal Icing
To achieve the final desired lavish multi-layered piping patterns on our cake design, we must first pipe a structural framework of complex interlocking patterns to be able to support the over-piped layers of Royal Icing as the decorating process evolves.
David will show you how to achieve this using free-hand piping techniques, while demonstrating how to create unlimited design options on each wedding cake to give individuality of each tier, while creating exciting focal points – ready to be enhanced with decorative overpiped embellishments.
Advanced Overpiping with Royal Icing
By layering free-hand Royal Icing piping on top of existing piped patterns will add dimension and depth. Embellish overpiping with added multi-directional free hand overpiping will create new patterns within the original design pattern framework, so our piping design evolves and re-invents itself, creating more and more dramatic multi-dimensional patterns giving the initial WOW! factor to our design – David will show you how!
3D Piping with Royal Icing
David will be your guide as you enhance the giant wedding cake tiers with multi-directional free-hand piped Royal Icing patterns to achieve awesome 3D effects – Combining piping with advanced run-out flood work techniques with emphasis on curved accents and geometric patterns will ensure extra beauty to our design and give additional focal points of interest when our client and wedding guests admire our cake creation close up.
Fine Piping Detail with Royal Icing
A lavish piped cake with chunky piping patterns will look great from a distance. If fine detail is not in place the cake design will not have the same impact when viewed close up.
If a lavish piped cake design becomes more and more exciting the closer it is viewed – this will guarantee that “WOW!!” reaction from our client and wedding guests.
Discover how to combine many different free-hand piping techniques together – From intricate multi-layering to fine embroidery effects and advanced complex suspended string work patterns – all applied directly and spontaneously onto wedding cake tiers.
The Finishing Touches

Delivering Giant Muti-tiered Wedding Cakes – Logistics and Responsibilities
During his 30 years of retail cake store business David has delivered hundreds if not thousands of wedding cakes to Hotel venues all over the United Kingdom.
Delivering giant multi-tiered wedding cakes is always an exciting challenge and in this module, David will discuss in depth his experiences of delivering such cakes – the logistics involved and the huge responsibility that cake designers must be prepared to take in order to ensure that everything goes to plan without any potential problems becoming a major issue!
Setting Up Giant Multi-tiered Wedding Cakes – The Live Challenge
David has found during his 30 years of retail cake store experiences that most wedding venues will not take responsibility for the setting up of a giant multi-tiered cake and realistically, David would not expect them to.
With such high expectations from our client (who is paying us lot of money) as cake designers setting up our giant creation, we now have to be in complete control – as we climb that ladder to set up 10ft of Royal Icing decorated wedding cake! It’s a huge responsibility, especially with a gathering audience of hotel staff and Chefs (which is what normally happens!)
In this module David will invite each student to experience first hand the setting up procedure of the finished giant multi-tiered wedding cake creation to give confidence and an understanding of the structural engineering of the creative art piece, along with having to deal with those intense creative emotions of jeopardy while performing this piping technique in a public place.
Our client has requested extra piping detail that can only be finished at the venue so the pressure is on, our adrenaline is in over-drive, but if we stay focused and calm – we will achieve our goal!…

Minimum Age Requirement
The minimum age requirement for a student to attend a David’s Cake Craft cake decorating course is 18 years of age.

Many international students who attend David’s Cake Craft masterclasses travel to Liverpool from very long distances. After a few days of being absorbed in such intensive training combined with jet lag, it is natural that you may start feeling a little tired. So, we have a rest day scheduled on the 4th day, taking a break from the 7 day training programme, which gives everyone a free day, wide open to enjoy at their leisure. You may wish to simply relax and replenish for the creative days ahead or discover Liverpool taking a magical mystery tour and explore our wonderful city!
Whether it is shopping or taking a scenic tour of the city centre with a travel guide ( that we can arrange for you) , it’s always great to discover the cultural, sights and sounds of Liverpool old and new!
